Ponfeigh’s signature brand, reclaiming Western Pennsylvania’s roots as the birthplace of American whiskey. The rye grain that makes up 95% of the grain bill is grown naturally without any pesticides or herbicides and in counties that lie within the unique growing conditions of the Monongahela River Basin. This quality grain, and our meticulous production, make for an exceptional whiskey that has aromas of dried fruit and baking spice, a robust palette thick with vanilla, caramelized sugars, and dates, and a lengthy finish of peppercorn spice, ripe fruit, and toasted oak.

A version of our Signature Brand, Westsylvania Rye, that has been blended to 90-proof with pure water. Our Master Blender chooses barrels with the most pronounced oak and spice character to be released as our 90-proof whiskey. Lowering the proof of the spirit opens up flavors, making for a completely new dram of whiskey. The buttery sweetness is more prominent and the nuanced character of the spice and oak is spread out on the palette to make for an easily appreciable whiskey

Maryland Rye is a smoother and less spicey whiskey that is traditionally made of many different combinations of grains but always predominantly with rye. Our mash bill adheres to the historic roots of this whiskey by adding 30% corn to the mash bill along with our rye and malted barley. Maryland Rye Whiskey makes for an exceptionally well-balanced spirit with notes of oak and dried fruit while the caramel sweetness imparted by the oak and corn rounds out the rye spice. This whiskey will delight all whiskey drinkers, especially appealing to those more familiar with bourbon.

Rum was the dominant spirit in the US until 1807 when the notorious Triangle Trade came to a sudden halt and so did the supply of the much-loved spirit. Monongahela Rye whiskey filled the need quite nicely, and Western Pennsylvania had a virtual monopoly on its production. Our Rye cask finished Rum mixes the traditions of Western Pennsylvania Whiskey with the traditions of rum in the region to make our Rumskey a very unique spirit, touched by the spice of rye and oak imparted with our barrel finish.

LONDON DRY GIN FINISHED IN PONFEIGH RYE BARRELS
In keeping with the Rye production of Western Pennsylvania, Ponfeigh set out to make a whiskey Drinker's gin. Ponfeigh imports the Gin and finishes it for several months in freshly dumped barrels that held our rye whiskey. The Gin has botanicals of angelica, coriander, juniper, lemon peel, licorice, and orange peel that are a pleasing accompaniment to the spices it receives from the barrel. The Ginskey has a light caramel color and the spirit rolls out of the glass with a creamy mouthfeel and a palate of Lemongrass and Rye spices.
